Figs are a sweet and very nutritious fruit with many properties, native to Iran and the city of Estahban. The tree grows between 3 and 9 meters tall and has claw-shaped leaves. Figs are from the berry family, are sensitive to extreme cold, and are mostly grown in temperate and subtropical regions. 1. Size
Figs are divided into 5 categories in terms of size, which are indicated by English letters:
Grade AAA, which is the largest type of fig and is more than 23 mm.
Grade AA, which is called medium-sized fig and is about 20 to 23 mm.
Grade A, which is small in size and is between 17 and 20 mm.
Grade B, which is very small and is also known as fake figs.
Grade C, which is the smallest of all and is used for powdering or jam.

2. color
The next item that plays an important role in buying Estahban figs is the color of the fig. The lighter the fig, the higher the price, and the darker the fig, the lower the price. The reason for this is that lighter figs are sweeter and of course have a more beautiful appearance.
If we want to classify figs in terms of color, we can say that there are 5 categories in order of brightness:
Super lux figs, normal yellow figs, bicolor figs, semi-dark figs, extremely-dark figs
Therefore Super lux figs are the brightest and most expensive.

One of the main differences in the price of Estahban figs is whether the figs are open or closed. Open-mouthed figs are more expensive than closed-mouthed figs. The reason for the price difference is that open-mouthed figs have a more beautiful appearance, sweeter taste, and greater absorption of mineral salts.
Open-mouthed figs themselves are divided into 4 categories, which increase in order of openness:
Parak figs, Sadyek figs, Bud figs, and Key figs that are in order from the most widely opened-mouth fig to the least one.
